Ingredients
- 200g sweet potato dangmyeon
- 150g beef sirloin, thin sliced, 1 Tbsp soy + 1 tsp sugar + 1 tsp sesame oil marinade 15 min
- 1 carrot julienned, 1 onion sliced
- 100g spinach blanched, 4 shiitake sliced
- 2 scallions, 1 Tbsp garlic
- 3 Tbsp soy, 1.5 Tbsp sugar, 1.5 Tbsp sesame oil, 1 Tbsp toasted sesame seeds
- Neutral oil
Steps
- Boil noodles 8 min until springy, rinse cold, drain, cut 6-inch, toss 1 Tbsp soy + 1 Tbsp sesame oil.
- Sear beef 90 sec, remove; stir-fry carrot, onion, shiitake separately 90 sec each with pinch salt.
- Blanch spinach 30 sec, shock, wring dry, season salt + sesame oil.
- Toss all with soy, sugar, sesame oil and scallions on low heat 1 min to marry.
- Finish sesame seeds; serve warm or room temp.
Tips
- Cook veg separately for clear colors; crowded pan steams and muddles.
